That said, wood will still dent, scratch and stain. That just adds to the character of the wood!
For charcuterie boards, butcher block conditioner is best. It generally has food safe wax to keep it protected and food safe mineral oil to keep it seasoned. A well seasoned board is less likely to want to retain the flavor and smells of the food you served on it. We like the Howard products. Easy to find online or at Lowe's and Home Depot.
For Whiskey boards, Bourbon boards and anything that has been carved, mineral oil is best. You do not want the wax from butcher block conditioner getting in the carving. Mineral oil keeps those boards looking great!
Solid wood is tough, but there are limits. Never put your board in the dishwasher, or immerse in water.
Take a warm soapy dish rag, wring it out and wash your board like anything else. Wipe it down and towel dry right away.
Apply a generous line down the middle of the board. Take a soft cloth and rub the conditioner all over. You don't have to rub it in, just cover the board. It will create a glaze when dry. We like to leave it over night for best results, but you can take the other side of the cloth and buff it out in as little as 30 minutes after application if you need to. Only takes a minute to buff it out.
Most live edge, rustic lumber has cracks, voids and other characteristics that make it more interesting and beautiful than other wood. Our boards have all these filled with food safe products to insure that where your food touches, it cannot get in a crack. sides and bottom are generally not filled except for aesthetic reasons. Cracks, voids, etc. are always left open on Whiskey and Bourbon boards as they make them look even more rustic.
From time to time, an overzealous guest will take a knife and start sawing away on the board without consent. We have had a guest put a hot tea kettle on one and create a lovely ring. Other mishaps have caused the board to need a little TLC. These are almost always repairable, so don't worry. We stand behind our work. Even if its your fault, we can generally repair it for little to nothing.
